I've contacted Fasthosts and they say there is nothing wrong at there end it's a WP issue, pretty much what I expect the answer to be. If you can't upload with those settings, the ownerships on the files are wrong. Part of the problem comes from "Uploads Path" specified in the SQL database that value is no longer used by WordPress and if the Uploads Path exist in your database then You may need to fix the file ownership and file permissions.

Also copying the content from a terminal path on the server fixes it and goes back to the short version: wp-content/uploads.
I did your recommended fix #1 which required me to delete a single extra backslash at the beginning of "(/)wp-admin/uploads" and that fixed the frustrating problem. This was easy to understand and i was able to fix this directory creation problem that has been frustrating me for hours.
